Cheap Yummy Cookies

After a dinner of ramen and cabbage (which was yummy yet not as filling as I would have hoped) both baby and I exchanged looks... it was time for dessert! What to make? It was 2am and I was not only hungry but broke! In the end using just what was in my kitchen I turned out 30 yummy cookies for us to munch on all week!

White Chocolate Cookies

(the following recipe was adapted from this one at food.com, prices come from Harris Teeter and Sam's Club)

  • 2 1/2 cups all purpose flour = $0.16
  • 3/4 cup brown sugar = $0.32
  • 1 cup sugar = $0.28
  • 2 eggs = $0.16
  • 1 teaspoon vanilla extract = >$0.01
  • 1 teaspoon baking soda = >$0.01
  • 1/2 teaspoon salt = >$0.01
  • 1 cup butter or margarine ( I used Best Life Butter Spread I got for FREE when Bloom had it on sale + my coupon) = $0.00
  • 1 1/2 cup white chocolate chucks (Got a tray for $4.00 and used 6 small blocks of the 20, you can get it MUCH cheaper) = $1.20

 

Total Cost = $2.12 for 30 Cookies (that's 7 cents a cookie!)

Sorry to have up and disappeared everyone. Life happens to say the least...

In summary I made Dean's List last semester! Had a fun summer with my step daughter and am now so broke its not funny!

Baby and I are having to tighten out belts so hard I think I may break a bone! Come this august I will have to feed TWO people off $60!

How the hell will I do this? No idea but it's do or die! I'll keep you update on the whole experience.

Peanut Butter Fudge

It's spring break and I am in need of some  "treats" after my mid-terms. Here is a yummy recipe (and cheap!) for peanut butter fudge from my FAV chef Alton Brown.

Cook Time: 4 min
Level: Easy
Yield: 64 (1-inch) pieces

Ingredients:
1 cup butter, plus more for greasing pan
1 cup peanut butter
1 teaspoon vanilla
1 pound powdered sugar
Directions:
Microwave butter and peanut butter for 2 minutes on high. Stir and microwave on high for 2 more minutes.

Add vanilla and powdered sugar to peanut butter mixture and stir to combine with a wooden spoon.

Pour into a buttered 8 by 8-inch pan lined with waxed paper. Place a second piece of waxed paper on the surface of the fudge and refrigerate until cool. Cut into 1-inch pieces and store in an airtight container for up to a week.

CHEAP TIP!

Powder Sugar can be expensive!  I use my handy food processor and pulse my regular plain old sugar down to the right texture :) EASY and and CHEAP! (also you can place a pinch or so of corn starch to match it to the store bought product - i like mine plain)

Ahhh! Another test on Monday and then my last mid-term on Wednesday... today is JUST Saturday and I am already freaking out!
